Salted Caramel Dulce de Leche Cookie Cups

Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with paper liners.

Prepare the Cookie Dough:

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand mixer or stand mixer until light and fluffy (about 2-3 minutes).

Beat in the egg and vanilla extract until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Shape the Cookie Cups:

Roll the dough into 1-inch balls and place each ball into the mini muffin tin, gently pressing down to form a small indentation in the center of each cookie cup.
