Roasted Potatoes with Cheddar and Parmesan

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

Prepare the Potatoes: In a large bowl, toss the diced potatoes with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.

Roast the Potatoes: Spread the potatoes in a single layer on the prepared baking sheet. Roast in the oven for 25–30 minutes, tossing halfway through, until golden brown and crispy.

Add Cheese: Sprinkle the cheddar and Parmesan cheeses evenly over the potatoes. Return to the oven and bake for another 5–7 minutes, until the cheese is melted and bubbly.

Serve: Garnish with fresh parsley and serve hot. These cheesy, crispy roasted potatoes are perfect as a side dish or snack!
