Preheat your oven to 400°F (200°C).
Wash and peel the potatoes (optional) and slice them into 1/4-inch thick rounds.
Season the Potatoes:
In a large bowl, toss the potato slices with olive oil, salt, black pepper, garlic powder, and paprika (if using). Make sure the potatoes are evenly coated.
Roast the Potatoes:
Arrange the seasoned potato slices in a single layer on a baking sheet lined with parchment paper or foil.
Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden and crispy on the edges.
