Roasted Potato Slices with Cheese: A Crispy, Cheesy Delight

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Wash and peel the potatoes (optional), then slice them into thin, uniform rounds about 1/4-inch thick. This will ensure they cook evenly.

Season the Potatoes: In a large bowl, toss the potato slices with olive oil, salt, pepper, garlic powder, and your choice of dried thyme or rosemary. Ensure all the potato slices are evenly coated with the seasoning mixture.

Arrange on the Baking Sheet: Spread the seasoned potato slices in a single layer on the prepared baking sheet. For extra crispiness, make sure the slices don’t overlap.

Roast the Potatoes: Roast the potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the edges. Halfway through, flip the slices to ensure even roasting on both sides.

Add the Cheese: Once the potatoes are crispy and cooked through, remove them from the oven and sprinkle the shredded cheddar cheese and grated parmesan evenly over the slices. Return the potatoes to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Once the cheese is melted and golden, remove the potatoes from the oven and garnish with fresh parsley for a pop of color. Serve immediately while the cheese is still gooey and delicious.
