In a bowl, mix orange juice, zest, garlic, olive oil (or butter), honey, soy sauce, thyme, paprika, salt, and pepper.
Season the Chicken:
Brush or rub the marinade all over the chicken, making sure to coat it evenly.
Arrange the remaining orange slices around the chicken in the pan.
Roast the Chicken:
Roast for about 60–75 minutes, basting with the pan juices every 20 minutes.
The chicken is done when the internal temperature reaches 165°F (75°C) in the thickest part.
Rest and Serve:
Let the chicken rest for 10 minutes before slicing.
Serve with roasted vegetables, rice, or a fresh salad.
