While the cauliflower is roasting, heat a little olive oil in a skillet over medium heat.

Assemble the Cauliflower Steaks:
Once the cauliflower steaks are roasted, remove them from the oven. Spoon the sautéed mushrooms over the top of each cauliflower steak.
Sprinkle the mozzarella cheese and Parmesan (if using) over the mushrooms and cauliflower.
Melt the Cheese:
Return the cauliflower steaks to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve and Garnish:
Remove the cauliflower steaks from the oven and sprinkle with freshly chopped parsley for added freshness and color.
