Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Roast the carrots: Toss the carrot sticks in olive oil, salt, pepper, cumin, and paprika. Spread them out evenly on the prepared baking sheet. Roast for 25–30 minutes, or until tender and lightly caramelized, turning halfway through for even cooking.
Make the whipped ricotta: While the carrots roast, combine the ricotta cheese, heavy cream, olive oil, salt, pepper, and lemon zest in a food processor. Blend until smooth and creamy. Taste and adjust the seasoning if needed.
Prepare the spiced honey: In a small saucepan, warm the honey over low heat. Stir in hot sauce or chili flakes, cinnamon, ginger, and a pinch of salt. Let it simmer for 1–2 minutes to infuse the flavors.
Assemble: Once the carrots are roasted, plate them and spoon the whipped ricotta on top. Drizzle with the spiced honey, and garnish with fresh thyme if desired.
