Roasted Carrots with Whipped Ricotta and Hot Honey

Preheat your oven to 400°F (200°C).
Toss the peeled and cut carrots in olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet.
Roast the carrots in the preheated oven for 20-25 minutes, turning once, until they are tender and slightly caramelized at the edges.
Step 2: Make the Whipped Ricotta

While the carrots are roasting, add the ricotta cheese, heavy cream, and lemon juice to a food processor or blender.
Process until smooth and creamy, adding a pinch of salt to taste. If you don’t have a food processor, you can use a hand mixer or whisk to achieve a creamy consistency.
Step 3: Assemble the Dish

Once the carrots are done, transfer them to a serving platter.
Spoon the whipped ricotta over the roasted carrots. Spread it evenly or leave some pockets of ricotta for texture.
Drizzle the hot honey over the top of the dish. If you want more heat, sprinkle the crushed red pepper flakes on top for an added kick.
Step 4: Garnish and Serve

Finish by garnishing with fresh parsley for a pop of color and freshness.
Serve immediately and enjoy!
