Preheat the oven to 400°F (200°C).
Toss the potato fries with vegetable oil and salt in a large bowl.
Spread them evenly on a lined baking sheet.
Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
2. Caramelize the Onions
In a large skillet, heat olive oil and butter over medium-low heat.
Add sliced onions and cook slowly for 20-25 minutes, stirring occasionally.
Once onions are soft and golden, stir in sugar and balsamic vinegar. Cook for 2 more minutes, then remove from heat.
3. Cook the Ribeye Steaks
Season the ribeye steaks generously with salt and black pepper.
Heat a cast-iron skillet over high heat until smoking hot.
Sear the steaks for 3-4 minutes per side (for medium-rare), adjusting the time based on your preference.
Transfer to a plate to rest for 5 minutes before slicing.
4. Assemble and Serve
Plate the ribeye steaks, topping each with a generous portion of caramelized onions.
Add the crispy fries on the side.
Sprinkle with fresh parsley and serve immediately.
