Peel and cut the potatoes into bite-sized pieces.
Place them in a pot, cover with water, and add a pinch of salt.
Boil until fork-tender (about 10–15 minutes), then drain and set aside.
Step 2: Prepare the Chicken
Slice each chicken breast in half for thinner pieces (if desired).
Season with salt, black pepper, paprika, and garlic powder.
Step 3: Sauté the Vegetables
Heat 1 tablespoon of oil or butter in a large pan over medium heat.
Add the chopped onion and sauté until soft and translucent.
Stir in the sliced green and red peppers, cooking for another 2–3 minutes.
Step 4: Cook the Chicken
Push the vegetables to the side and add another tablespoon of oil to the pan.
Place the seasoned chicken breasts in the pan and cook for 5–6 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F or 75°C).
Step 5: Combine and Serve
Add the boiled potatoes to the pan and gently stir everything together.
Sprinkle with fresh parsley and let the flavors meld for 2–3 minutes.
