Refreshing Green Tea, Lemon & Ginger Chews: A Healthy, Zesty Snack

Prepare the Green Tea: In a small saucepan, bring the water to a boil. Once it’s boiling, remove from heat and add the green tea leaves (or tea bags). Let the tea steep for about 5 minutes to extract a rich flavor. Remove the tea bags or strain out the leaves.
Infuse with Ginger: Add the grated ginger to the hot tea and allow it to steep for another 2 minutes. This infuses the tea with a refreshing ginger kick.
Prepare the Gelatin: In a separate small bowl, mix the gelatin powder with 2 tablespoons of cold water. Stir to dissolve and let it sit for a few minutes to bloom. If you’re using agar agar, follow the instructions on the package.
Combine and Heat: Add the honey (or maple syrup), lemon juice, and lemon zest (if using) to the green tea mixture. Stir well. Then, add the bloomed gelatin mixture and stir until fully dissolved. Place the saucepan over low heat and simmer for 2-3 minutes, stirring constantly, until everything is well combined.
Mold the Chews: Pour the mixture into silicone molds or a small baking dish lined with parchment paper. Ensure the mixture is evenly distributed. Let it cool slightly at room temperature before transferring to the refrigerator.
Chill and Set: Refrigerate for at least 2-3 hours, or until the chews are firm and set. Once set, remove from the molds or cut into bite-sized squares if using a baking dish.
Serve: Store the chews in an airtight container in the refrigerator for up to 1-2 weeks. Enjoy them as a refreshing and health-boosting snack.
