Reese’s Peanut Butter Chocolate Cheesecake Cake Recipe

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
Add eggs, buttermilk, melted butter, and vanilla extract. Mix until smooth.
Gradually add hot coffee, mixing until the batter is thin and smooth.
Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
Let the cakes cool completely in the pans before removing.
2. Prepare the Cheesecake Layer:

Preheat the oven to 325°F (165°C).
In a mixing bowl, beat cream cheese and sugar until smooth and creamy. Add sour cream and vanilla extract, mixing until well combined.
Add eggs one at a time, mixing just until combined after each addition.
Stir in chopped Reese’s Peanut Butter Cups and dulce de leche.
Pour the cheesecake batter onto a lined springform pan (8-inch), and smooth the top.
Bake for 50-60 minutes, or until the center is set but still slightly jiggly. Let it cool in the pan for 1 hour before transferring to the fridge for at least 4 hours or overnight.
3. Prepare the Peanut Butter Buttercream:

In a large bowl, beat butter and shortening until smooth. Add peanut butter and vanilla extract, mixing until combined.
Gradually add powdered sugar, beating until smooth and fluffy. Adjust the amount of powdered sugar based on your desired consistency.
4. Prepare the Chocolate Ganache:

Heat heavy cream in a saucepan over medium heat until it begins to simmer.
Pour the hot cream over chocolate chips in a bowl. Let it sit for 2-3 minutes, then stir until smooth and glossy.
Stir in vanilla extract.
5. Assemble the Cake:

Place one layer of the chocolate cake on a serving platter. Spread a layer of peanut butter buttercream on top.
Place the cheesecake layer on top of the cake, followed by the second layer of chocolate cake.
Frost the top and sides of the entire cake with the remaining peanut butter buttercream.
Drizzle the chocolate ganache over the top of the cake, letting it drip down the sides.
Garnish with additional chopped Reese’s Peanut Butter Cups and a sprinkle of chocolate shavings, if desired.
