Add chopped red and green bell peppers, black olives, and red onions. Stir and cook for 2-3 minutes until softened.
Remove from heat and let the mixture cool slightly.
Assemble the Eggrolls:
Lay an egg roll wrapper on a clean surface in a diamond shape.
Place a spoonful of the beef mixture in the center.
Add shredded cheddar cheese and a drizzle of cheese sauce.
Fold in the sides, then roll tightly, sealing the edges with a bit of water.
Fry to Perfection:
Heat canola oil in a deep pan or fryer to 350°F (175°C).
Fry each egg roll for about 2-3 minutes per side until golden brown and crispy.
Remove and drain on paper towels.
