If you have pre-chopped vegetables, this step will go even faster! Otherwise, peel and dice the potatoes, slice the carrots, and chop the broccoli into florets.
Slice the sausage into bite-sized pieces.
Season the Vegetables and Sausage:
In a large bowl, combine the diced potatoes, sliced carrots, and sausage pieces. Drizzle with olive oil, then sprinkle with garlic powder, paprika, salt, and pepper. Toss everything together until evenly coated.
Roast the Dish:
Spread the seasoned mixture out on a baking sheet in a single layer.
Roast for 20-25 minutes, or until the potatoes are tender and the sausage is cooked through. Stir halfway through to ensure even cooking.
Add the Broccoli:
After the first 20-25 minutes, add the broccoli florets to the baking sheet, and toss everything together. Roast for an additional 5-7 minutes, or until the broccoli is bright green and slightly crispy.
Serve:
Remove the dish from the oven and serve immediately. Optionally, sprinkle with fresh parsley for a pop of color.
