Heat a splash of olive oil in a pan over medium heat. Add the chopped onion and minced garlic. Sauté for about 2 minutes until fragrant and softened.
Add the ground beef to the pan, breaking it apart with a spoon. Cook for 5-7 minutes, or until browned and fully cooked.
Season the beef with salt, black pepper, and paprika. Stir well to combine.
Prepare the Tortilla:
While the beef cooks, heat the tortillas in a separate pan for about 1-2 minutes on each side, just to warm them up and make them slightly crispy.
Assemble the Tortillas:
Once the beef is ready, take one tortilla and spoon the beef mixture in the center. Sprinkle a generous amount of shredded mozzarella cheese over the beef.
Place the second tortilla on top and gently press down.
Cook the Tortilla Wrap:
Heat a little olive oil in the same pan over medium heat. Carefully place the tortilla stack in the pan and cook for 2-3 minutes on each side, or until golden brown and the cheese is melted inside.
Serve:
Remove the tortilla from the pan, sprinkle with fresh parsley, and cut into wedges. Serve hot!
