Grate the potatoes and carrot. Finely chop the onion. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
Mix the Ingredients:
In a large mixing bowl, combine the grated potatoes, onion, grated carrot, eggs, milk, and flour. Stir well to ensure everything is evenly mixed.
Cook the Dish:
Heat 2-3 tablespoons of olive oil in a non-stick frying pan over medium heat. Once hot, spoon the potato mixture into the pan, flattening it into an even layer. Cook for about 4-5 minutes on one side until golden brown and crispy, then flip it and cook for another 4-5 minutes until the other side is crispy and cooked through.
Serve:
Once cooked, remove the dish from the pan and place it on a paper towel-lined plate to absorb any excess oil. Slice and serve hot!
