Puff Pastry Baskets – A Restaurant-Inspired Surprise

Preheat the oven according to the puff pastry instructions (usually around 400°F / 200°C).

Roll out the puff pastry on a lightly floured surface. Cut the pastry into squares or circles that will fit into muffin tins or a baking dish to form little baskets.

Place the pastry pieces into the muffin tin, pressing gently to create a basket shape.

Brush the edges with melted butter to help them brown beautifully.

Bake the pastry according to the package instructions, typically 12-15 minutes or until golden brown and crispy.

Prepare the Filling:

While the puff pastry is baking, prepare the filling.

In a bowl, mash the boiled potatoes until smooth.

Add the canned red beans and canned corn, and stir to combine.

Season with salt, black pepper, and a pinch of sweet paprika to taste.

Stir in a couple of tablespoons of sour cream to make the mixture creamy.
