Prime Rib Recipe for Christmas: A Tender and Flavorful Holiday Feast

Preheat your oven to 500°F (260°C).
Place the prime rib roast on a roasting rack in a large roasting pan.
Pat the roast dry with paper towels to remove excess moisture (this helps create a nice crust).
In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, parsley (if using), kosher salt, black pepper, onion powder, smoked paprika, and mustard powder. Stir until it forms a paste.
Rub the paste evenly over the entire surface of the roast, pressing it into the meat to adhere well.
Step 2: Roast the Prime Rib
Place the roast in the preheated oven and roast for 15-20 minutes at 500°F (260°C) to develop a flavorful crust.
After 20 minutes, reduce the oven temperature to 325°F (165°C). Continue roasting for an additional 1.5 to 2 hours, or until the internal temperature reaches 120°F (49°C) for medium-rare or 130°F (54°C) for medium.
During the roasting process, baste the roast occasionally with the beef broth to keep it moist and flavorful.
Once the roast reaches your desired internal temperature, remove it from the oven and tent it loosely with aluminum foil. Let the roast rest for 15-20 minutes before slicing. Resting is essential as it allows the juices to redistribute and ensures a tender, juicy roast.
Step 3: Make the Au Jus (Optional)
While the prime rib rests, make the au jus by placing the roasting pan with the beef drippings over medium heat on the stovetop.
Pour in the beef broth and red wine, scraping the bottom of the pan to release any browned bits (fond) from the roast.
Bring to a simmer and cook for 5-7 minutes to reduce slightly.
Stir in the fresh thyme leaves and butter, and cook for an additional 2-3 minutes until the sauce is smooth and well combined.
Strain the au jus through a fine-mesh sieve and serve alongside the sliced prime rib.
Step 4: Slice and Serve
After the prime rib has rested, slice it into thick, even slices.
Serve the slices with a drizzle of the au jus, roasted vegetables, mashed potatoes, or your favorite Christmas side dishes.
