Potato Roll-Ups with Chicken and Bell Pepper Filling

Lay a piece of parchment paper on your work surface. Spread the mashed potato mixture evenly on the paper, forming a rectangle about 1/2 inch thick.

Spoon the chicken and bell pepper mixture evenly over the mashed potatoes.

Carefully roll up the potato and filling into a tight log, using the parchment paper to help shape it. Pinch the ends to seal.

Cooking the Roll-Ups:

Preheat the oven to 350°F (175°C).

Place the roll-up onto a baking sheet lined with parchment paper or greased.

Bake in the preheated oven for about 20-25 minutes, or until the roll is golden and slightly crispy on the outside.

Serve:

Let the roll-ups cool slightly before slicing into pieces.

Serve warm, and if desired, sprinkle with extra grated cheese for added flavor.
