Boil the peeled potatoes in salted water until fork-tender, about 12-15 minutes.
Drain and mash the potatoes until smooth. Set aside to cool slightly.
Once cooled, beat the 3 eggs into the mashed potatoes, adding salt and pepper to taste. Mix until smooth and well combined.
Prepare the Filling:
Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
Add the chopped bell peppers and cook for another 3 minutes until softened.
Stir in the shredded chicken, paprika, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and let the mixture cool slightly.
