Preheat your oven to 375°F (190°C).
On a floured surface, roll the potato dough into a large rectangle about 1/4 inch thick.
Spread the chicken and bell pepper filling evenly over the dough, leaving about an inch around the edges.
Carefully roll the dough into a log, sealing the edges well.
Slice the log into 1-inch thick rolls and place them on a baking sheet lined with parchment paper.
Bake:
Bake the roll-ups for 20-25 minutes, or until they are golden brown and the cheese is bubbling inside.
Once done, remove from the oven and allow them to cool slightly before serving.
