Slowly pour in the milk and melted butter, then knead the dough until smooth and elastic. You may need to add a bit more flour if the dough is too sticky.
Cover the dough with a kitchen towel and let it rise in a warm place for about 30 minutes, or until it has doubled in size.
Make the Filling:
Heat olive oil in a pan over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until softened and fragrant.
Add the diced bell peppers and cook for another 3-4 minutes until the peppers are tender.
Stir in the shredded chicken, paprika, cumin, salt, and pepper. Mix well and cook for an additional 5 minutes.
Remove the pan from heat and let the mixture cool slightly. Stir in the shredded cheese and set aside.
