Potato and Veggie Fritters

Prepare the Potatoes: Begin by peeling and boiling the potatoes until tender. Once boiled, mash the potatoes in a large mixing bowl.

Add Vegetables: Add the chopped onion, grated carrot, chopped bell pepper, and minced garlic to the mashed potatoes. Stir to combine.

Season and Bind: Beat the eggs and add them to the potato mixture. Season with salt, pepper, and paprika. Mix well to ensure everything is combined. Gradually add the flour and mix until you have a thick batter-like consistency.

Fry the Fritters: Heat a generous amount of vegetable oil in a frying pan over medium heat. Once the oil is hot, spoon dollops of the potato mixture into the pan, flattening them slightly with the back of the spoon. Fry for about 3-4 minutes on each side, or until golden brown and crispy.

Serve: Remove the fritters from the pan and place them on paper towels to drain excess oil. Serve warm, garnished with a little extra paprika or fresh herbs if desired.
