Potato and Chicken Patties with Creamy Mushroom Sauce

In a large bowl, combine the grated potatoes, minced chicken, eggs, salt, pepper, garlic powder (optional), and fresh parsley (optional). Mix well until all ingredients are combined.

If the mixture feels too loose, add a little bit of breadcrumbs to help bind it together.

Form the Patties:

Shape the mixture into small patties, about 2-3 inches in diameter.

Cook the Patties:

Heat olive oil in a large skillet over medium heat.

Fry the patties for about 4-5 minutes on each side or until golden brown and cooked through. Remove them from the skillet and set them aside.
