Pork Filet Mignon with Bacon

Preheat the Oven: Preheat the oven to 190°C (375°F).

Season the Pork: Rub the pork filet mignon with salt, pepper, paprika, and garlic powder.

Wrap with Bacon: Wrap the filet mignon with the bacon slices, securing with toothpicks if needed.

Sear the Filet: Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides (about 2-3 minutes per side) until the bacon becomes golden and crispy.

Bake the Filet: Transfer the skillet with the pork to the oven and bake for 20-25 minutes, or until the internal temperature of the pork reaches 63°C (145°F). Let the filet rest for 10 minutes covered with aluminum foil.

For the Creamy Sauce:

Cook the Garlic and Shallots: In a saucepan, melt butter over medium heat. Sauté the garlic and shallots until softened and translucent (about 3 minutes).

Make the Sauce: Add the fresh cream and poultry broth to the saucepan. Simmer over low heat for about 5 minutes.

Finish the Sauce: Stir in the grated parmesan and fresh parsley. Season with salt and pepper to taste.
