Pork Belly with Green Peppers

Cut the green peppers and red pepper (if using) into strips.
Chop the scallion, slice the ginger, and mince the garlic.
2. Heat the Oil:
Heat cooking oil in a pan or wok over medium-high heat.
3. Cook the Pork Belly:
Add the sliced pork belly to the pan and cook until it starts to brown and become crispy, about 5-7 minutes.
Once the pork is cooked, remove it from the pan and set it aside.
4. Stir-Fry the Vegetables:
In the same pan, add a little more oil if needed. Toss in the ginger slices and garlic. Stir-fry for about 1 minute until fragrant.
Add the sliced green peppers (and red pepper if using) and stir-fry for 3-4 minutes, just until the peppers begin to soften but still retain some crunch.
5. Combine the Pork and Vegetables:
Return the pork belly to the pan with the peppers.
Add the soy sauce, cooking wine, and salt and white pepper to taste. Stir everything together to coat the pork and peppers evenly with the sauce.
If you prefer a saucier dish, you can add a splash of chicken stock to create a bit of sauce.
6. Finish and Serve:
Stir in the chopped scallion for added freshness.
Serve the pork belly and peppers hot with steamed rice or your favorite side dishes.
