Fry Pork:
Heat vegetable oil in a wok or large skillet over medium-high heat. Add the pork belly pieces and fry them until golden brown and crispy on the edges. Remove the pork belly from the pan and set aside.
Sauté Aromatics:
In the same wok, add the minced garlic and ginger. Stir-fry for about 1 minute until fragrant.
Add Chilies:
Add the sliced green chilies and stir-fry for about another minute, allowing them to soften slightly.
Combine and Simmer:
Return the fried pork belly to the wok. Add soy sauce, Shaoxing rice wine (if using), and rock sugar. Stir-fry for 2-3 minutes until the sauce thickens and coats the pork evenly.
Serve:
Serve the Pork Belly with Green Peppers hot over a bed of rice or noodles for a complete and delicious meal.
