In a large bowl, combine oil, egg yolks, and vanilla extract. Add the yeast mixture and stir to combine.
Gradually add the flour and salt. Mix until smooth, then knead the dough on a floured surface for about 5 minutes, adding extra flour as needed to prevent sticking.
Cover the dough and let it rest for 10-15 minutes to rise slightly.
2️⃣ Make the Custard Filling:
In a saucepan, whisk together sugar and cornstarch.
Gradually add the milk and egg yolk, whisking until smooth.
Bring the mixture to a boil over medium heat, stirring constantly for about 1½ minutes until thickened.
Remove from heat and let the custard cool, then refrigerate until ready to fill the paczki.
3️⃣ Shape & Bake the Paczki:
Preheat your oven to 350°F (175°C).
Roll out the dough to ½-inch thickness on a floured surface. Use a round cutter to cut out circles.
Place the dough circles on a greased baking sheet, cover, and let them rise for about 1 hour.
Bake for 10-12 minutes, or until the paczki are lightly golden on top.
4️⃣ Coat & Fill the Paczki:
While the paczki are still warm, brush them with melted butter.
Roll them in sugar until evenly coated.
Using a piping bag, fill each paczek with the prepared custard or jam of your choice.
5️⃣ Serve & Enjoy:
