Pistachio Snowball Cookies: A Nutty, Buttery Delight

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Prepare the Cookie Dough:
In a large mixing bowl, cream together the softened butter and powdered sugar until smooth and fluffy. Add the vanilla extract and mix until combined. Gradually add the flour and salt, mixing until just combined. Stir in the chopped pistachios until evenly distributed throughout the dough. The dough will be slightly soft and crumbly.

Shape the Cookies:
Roll the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet. Be sure to space them about 2 inches apart, as they will not spread much during baking.

Bake the Cookies:

Cool and Coat in Powdered Sugar:
Allow the cookies to cool on the baking sheet for 5 minutes. While still warm, roll them in powdered sugar to coat. Once fully coated, transfer the cookies to a wire rack to cool completely.

After the cookies are fully cooled, give them a final light dusting of powdered sugar for an extra festive touch. Serve and enjoy these delicate, nutty treats with a hot cup of tea or coffee.
