Pistachio Florentine Cookies

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

2️⃣ Make the Pistachio mixture:
In a medium saucepan, combine granulated sugar, corn syrup, and butter. Cook over medium heat, stirring constantly until the butter melts and the sugar dissolves, about 3-4 minutes. Bring the mixture to a gentle boil and allow it to bubble for 1-2 minutes.

3️⃣ Add flour and pistachios:
Remove the saucepan from heat and stir in all-purpose flour until fully incorporated. Then add the finely chopped pistachios and mix well until the mixture is smooth.

4️⃣ Form the cookies:
Drop small spoonfuls of the pistachio mixture onto the prepared baking sheet, spacing them about 2 inches apart. Use the back of the spoon to gently spread the mixture into thin circles.

5️⃣ Bake:
Bake for 7-8 minutes or until the edges of the Florentines are golden brown and crisp. Keep an eye on them, as they can burn quickly. Remove from the oven and let them cool completely on the baking sheet.

6️⃣ Drizzle with chocolate:
Once the cookies are cooled, drizzle with melted dark chocolate and melted white chocolate. You can use a spoon or a piping bag to create elegant swirls.

7️⃣ Garnish (optional):
Sprinkle the cookies with edible rose petals for a beautiful, delicate touch.

8️⃣ Serve:
Allow the chocolate to set before serving or storing. These cookies are perfect for a special occasion or an elegant treat!
