Pistachio Brookies

Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.

In a large bowl, cream together the softened butter, caster sugar, and light brown sugar until light and fluffy.

Add the egg and vanilla extract, mixing until smooth.

Gradually add the flour, baking soda, and salt, mixing until combined.

Stir in the chocolate chips and chopped pistachios.

Spread this cookie dough evenly in the bottom of the prepared pan, pressing it down gently.

For the Brownie Layer:
In a separate bowl, whisk together the melted butter and sugar.

Add the egg and vanilla extract and mix until smooth.

In another bowl, combine the flour, cocoa powder, baking powder, and salt.

Gradually stir the dry ingredients into the wet ingredients until combined.

Stir in the chopped pistachios.

Pour this brownie batter over the cookie layer and spread evenly.

Bake:
Bake for 25-30 minutes or until a toothpick inserted into the center comes out with just a few crumbs (not wet batter).

Let the brookies cool in the pan before cutting into squares or bars.
