Mix the Dry Ingredients:
In a large bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
Mix the Wet Ingredients:
In another bowl, beat together the sugar and egg until well combined. Add the drained crushed pineapple, vegetable oil, and vanilla extract, mixing until smooth.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix. If you’re adding chopped walnuts, fold them in at this point.
Bake:
Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for about 55-60 minutes or until a toothpick inserted in the center comes out clean.
Cool and Serve:
Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
