Pineapple Glazed Ham

Preheat your oven to 325°F (163°C). Place the ham on a roasting rack in a large roasting pan. If the ham is bone-in, score the surface in a diamond pattern, cutting just deep enough to penetrate the fat. This will help the glaze seep into the ham as it cooks.
Prepare the Pineapple Glaze:

In a small saucepan, combine the pineapple juice, brown sugar, soy sauce, honey, and Dijon mustard. Bring the mixture to a simmer over medium heat and cook for 5-7 minutes, stirring occasionally, until the glaze has thickened slightly.
Glaze the Ham:

Brush a generous amount of the pineapple glaze over the ham. Place the ham in the preheated oven and roast, basting with the glaze every 20-30 minutes to ensure it stays moist and flavorful. Roast the ham for about 1 1/2 to 2 hours, or until it reaches an internal temperature of 140°F (60°C).
Add Pineapple Chunks:

About 20 minutes before the ham is done, scatter the fresh pineapple chunks over the ham and brush them with the remaining glaze.
Serve:

Remove the ham from the oven and let it rest for 10-15 minutes before slicing. Serve with the pan juices and pineapple chunks.
