Pineapple Chicken and Rice

In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned on both sides, about 6-8 minutes. Remove the chicken from the skillet and set aside.
Sauté Onion:

In the same skillet, add the chopped onion and cook until softened, about 4 minutes.
Add Pineapple and Sauce:

Stir in the pineapple chunks, soy sauce, honey, rice vinegar, minced garlic, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 2-3 minutes.
Combine Chicken:

Return the cooked chicken to the skillet, tossing to coat it in the sauce. Let it cook for another 3-5 minutes, allowing the chicken to soak up the flavors.
Serve:

Serve the pineapple chicken mixture over cooked rice and enjoy this tropical, flavor-packed dish!
