Pineapple Chicken and Rice: A Sweet and Savory Tropical Dish

In a large skillet, heat olive oil over medium-high heat. Add the sliced chicken and cook until browned on both sides, about 5-7 minutes. Once cooked through, remove the chicken from the skillet and set aside.

2. Sauté the Onion:
In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes.

3. Add Pineapple and Sauce:
Stir in the pineapple chunks, soy sauce, honey, rice vinegar, garlic, and red pepper flakes (if using). Mix everything together and let it simmer for 3-4 minutes until the sauce is slightly thickened.

4. Combine:
Return the cooked chicken to the skillet and toss everything together to coat the chicken in the flavorful sauce.

5. Serve:
Serve the Pineapple Chicken and Sauce over the cooked rice. Garnish with additional red pepper flakes or fresh herbs, if desired.
