Philly Cheesesteak Meatloaf

Heat the oil in a skillet over medium heat. Add the diced onion, bell pepper, and mushrooms. Sauté for 5-7 minutes, until the vegetables are soft and any moisture from the mushrooms has evaporated. Remove from heat and let cool slightly.

Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, garlic powder, oregano, salt, and pepper. Add the sautéed vegetables, provolone cheese, Worcestershire sauce, and beef broth (if using). Mix everything until well combined.

Shape the Meatloaf:
Transfer the meat mixture to a baking dish or a lined baking sheet. Shape it into a loaf, ensuring it’s even on all sides.

Bake:
Preheat the oven to 375°F (190°C). Bake the meatloaf for about 40 minutes or until it reaches an internal temperature of 160°F (71°C).

Add Cheese:
Remove the meatloaf from the oven and sprinkle the remaining provolone cheese on top. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve:
Let the meatloaf rest for a few minutes before slicing. Garnish with fresh parsley and serve with your favorite sides like mashed potatoes or a salad.
