Pesto and Cherry Tomato Pizza Muffins

Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or line with paper liners.
2. Prepare the Pizza Dough:

Roll out the pizza dough on a lightly floured surface. Using a round cutter or a glass, cut the dough into small circles that will fit into your muffin tin. Press the dough circles into the muffin cups, gently shaping them to form a small “bowl.”
3. Assemble the Muffins:

Spoon about 1 teaspoon of pesto into the bottom of each muffin cup, spreading it evenly.
Place halved cherry tomatoes on top of the pesto, then sprinkle with mozzarella cheese (or goat cheese, depending on your preference).
4. Bake the Muffins:

Place the muffin tin in the oven and bake for 12-15 minutes or until the dough is golden and the cheese is melted and bubbly.
5. Garnish and Serve:

Once baked, remove the muffins from the oven and let them cool slightly. Garnish with fresh basil leaves before serving.
