Pepper Steak in a Crock Pot

Heat olive oil in a skillet over medium-high heat. Sear the steak strips for about 2 minutes on each side, just to brown them lightly. This step adds extra flavor but is optional if you’re short on time.
Prepare the Crock Pot:

Place the thinly sliced steak, onion, and bell peppers into the crock pot. Add the minced garlic and stir everything together.
Mix the Sauce:

In a small bowl, whisk together soy sauce, beef broth, Worcestershire sauce, balsamic vinegar, black pepper, and crushed red pepper flakes. Pour the sauce mixture over the steak and vegetables in the crockpot. Stir to coat everything evenly.
Cook the Pepper Steak:

Cover and cook on low for 6-8 hours or high for 3-4 hours, until the beef is tender and fully cooked.
Thicken the Sauce (Optional):

If you’d like to thicken the sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water to create a slurry. Stir this mixture into the crockpot during the last 30 minutes of cooking. Continue cooking on high until the sauce thickens.
Serve:

Serve the pepper steak over freshly cooked rice for a complete meal. Garnish with fresh parsley or green onions for an added touch.
