Peach Cobbler Snack Cake: A Deliciously Sweet Treat

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch baking dish or line it with parchment paper for easy removal.

Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Mix the Wet Ingredients: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This will take about 2-3 minutes using a hand mixer or stand mixer.

Add the Eggs and Vanilla: Beat in the eggs, one at a time, making sure each is fully incorporated before adding the next. Add the vanilla extract and mix until well combined.

Combine the Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing just until combined after each addition.

Fold in the Peaches: Gently fold in the diced peaches. Be careful not to overmix so that the peaches stay in chunks throughout the cake.

Bake the Cake: Pour the batter into the prepared baking dish and smooth the top. If desired, sprinkle brown sugar and cinnamon sugar over the top for extra flavor and a little crunch. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Let the cake cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely. Serve warm or at room temperature, and enjoy!
