In a large bowl, mix together ground meat, egg, breadcrumbs, garlic, paprika, herbs of Provence, salt, and pepper.
Shape the mixture into meatballs, about 3 cm in diameter, using wet hands.
Heat 1 tablespoon olive oil in a frying pan over medium heat. Brown the meatballs on all sides for about 5 minutes until golden. Set aside.
Step 2: Cook the Vegetables
In the same frying pan, add 2 tablespoons olive oil.
Sauté onion for 2 minutes, then add mushrooms, bell pepper, and zucchini. Cook for another 5 minutes, stirring frequently, until softened.
Step 3: Prepare the Sauce
Add tomato coulis, tomato concentrate, sugar, oregano, salt, and pepper to the pan with vegetables.
Stir and simmer over low heat for 10 minutes.
Add the meatballs back into the pan and cook for another 5 minutes.
Step 4: Cook the Pasta and Assemble
Cook the pasta according to the package instructions in a large pot of salted water.
Drain the pasta and add it to the pan with the meatballs, vegetables, and sauce.
Stir well and let it simmer for 2 more minutes to allow the flavors to meld together.
