Pan-Seared Mediterranean Cod in Tomato Basil Sauce

Season both sides of the cod fillets with salt and pepper.

Pan-Sear the Cod:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through. Remove the fillets from the skillet and set aside.

Prepare the Sauce:
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the finely chopped onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.

Cook the Tomatoes:
Add the halved cherry tomatoes to the skillet and cook for another 3 minutes, allowing them to soften and start to break down.

Add the Sauce Ingredients:
Stir in the diced tomatoes, dry white wine, and half of the chopped basil. Simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Finish the Dish:
Return the cod fillets to the skillet, placing them in the sauce. Spoon the sauce over the fillets and simmer for another 2-3 minutes until everything is heated through.

Serve:
Garnish with the remaining fresh basil and serve the cod with lemon wedges for a zesty finish.
