Finely chop the mixed vegetables into small pieces. You can use a food processor for quicker chopping.

Cook the Quinoa/Rice:

If you haven’t already, cook the quinoa or brown rice according to package instructions and set it aside to cool.

Mix the Ingredients:

In a large mixing bowl, combine the chopped vegetables, cooked quinoa or rice, chickpea flour, and your egg (or flaxseed mixture).

Add garlic powder, onion powder, smoked paprika, salt, and pepper. Stir until everything is well combined.

Form the Bites:

Using your hands or a spoon, form the mixture into small bite-sized balls or patties.

Cook the Veggie Bites:

Heat a little olive oil in a skillet over medium heat. Once hot, add the veggie bites and cook for about 3-4 minutes on each side, or until golden and crispy.

Serve:

Once crispy, remove the veggie bites from the skillet and drain on a paper towel. Serve warm.
