Preheat the oven to 400°F (200°C).
Pierce each potato with a fork and place them directly on the oven rack.
Bake for 45-50 minutes until tender.
Let the potatoes cool slightly before handling.
2. Prepare the Filling
Cut the potatoes in half lengthwise.
Scoop out the flesh, leaving a thin border inside the skins.
In a bowl, mash the potato flesh with sour cream, cheese, bacon, salt, and pepper until well combined.
3. Stuff & Bake Again
Spoon the mashed potato mixture back into the potato skins.
Place them on a baking sheet, drizzle with olive oil, and sprinkle with paprika if using.
Bake for 15-20 minutes, until the tops are golden and crispy.
4. Serve
Garnish with chopped green onions.
Serve warm and enjoy!
