Preheat the Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Prepare the Potatoes & Onions: Wash and peel the potatoes, then slice them into 1/2-inch-thick pieces. Halve the onion and cut each half into quarters. Chop the garlic finely.
Make the Coating: In a large bowl, combine the canola oil, olive oil, and onion soup mix. Stir well until the soup mix is dissolved into the oil.
Toss the Potatoes & Onions: Add the sliced potatoes, onion quarters, and chopped garlic to the bowl. Toss everything together until the potatoes and onions are evenly coated with the oil and seasoning mixture.
Bake: Spread the seasoned potatoes and onions in a single layer on the prepared baking sheet. Bake for 40-45 minutes, flipping the potatoes halfway through for even crispiness. Bake until the potatoes are golden brown and crispy on the edges.
Serve: Once the potatoes are crispy and golden, remove them from the oven. Let them cool for a few minutes before serving.
