Osuna-Style Potatoes (Patatas en Paseo)

Peel the potatoes (if desired) and cut them into half-moons.

Cook the Onions and Garlic:
Heat a generous amount of olive oil in a large frying pan or skillet over medium heat. Add the chopped onions and sliced garlic. Sauté until softened and golden brown, stirring occasionally to prevent burning.

Fry the Potatoes:
Add the potato slices to the pan with the onions and garlic. Stir gently to combine and coat the potatoes in the flavorful oil. Add salt, pepper, and paprika (if using).

Simmer and Cook:
Cover the pan with a lid, reduce the heat to low, and allow the potatoes to cook for about 20-25 minutes, stirring occasionally. The potatoes should soften and absorb the flavors. If necessary, add a splash of water to help cook them through.

Final Touches:
If you’re using a bay leaf, add it during the cooking process for extra flavor. When the potatoes are tender and golden, taste and adjust seasoning as needed.

Garnish and Serve:
Once cooked, remove the bay leaf (if used), sprinkle the fresh parsley over the top for a burst of color, and serve warm.
