One Pot Mexican Rice Casserole

In a large skillet, cook the ground beef and diced onion over medium-high heat. Season with salt and pepper to taste. Stir occasionally until the beef is fully cooked and no longer pink. Drain the grease if necessary.
Add the Seasoning:

Sprinkle the cooked beef with garlic powder and taco seasoning. Stir well to coat the beef and onion with the seasoning.
Add the Rice and Liquids:

Stir in the long grain white rice, beef broth, corn, tomato sauce, and salsa. Mix everything together.
Simmer:

Bring the mixture to a boil. Once boiling, cover the skillet, reduce the heat to low, and let it simmer for 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.
Top with Cheese:

Once the rice is cooked, sprinkle the top with shredded cheese. Cover again and let it sit for 2-3 minutes, or until the cheese has melted.
