One-Pan Garlic Herb Chicken with Potatoes & Green Beans: A Simple and Flavorful Dinner

Preheat your oven to 400°F (200°C).
Season the Chicken:

In a small bowl, mix together the olive oil, garlic, thyme, rosemary, paprika, onion powder, salt, and pepper.
Rub the seasoning mixture all over the chicken thighs, ensuring they are well coated.
Prepare the Vegetables:

In a separate bowl, toss the cubed potatoes with a drizzle of olive oil, salt, and pepper.
Add the green beans to the same bowl and toss them lightly with olive oil, salt, and pepper.
Arrange in the Pan:

On a large baking sheet or roasting pan, arrange the chicken thighs in the center.
Spread the potatoes around the chicken, making sure everything has enough space to cook evenly.
Place the green beans around the edges of the pan, leaving space between them and the chicken to ensure even roasting.
Roast Everything Together:

Roast the chicken, potatoes, and green beans in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy. You may want to check halfway through and toss the potatoes for even cooking.
Optional: Add a Zing:

For a burst of fresh flavor, drizzle the chicken and vegetables with lemon juice just before serving.
Serve:

Once everything is cooked, remove the pan from the oven and let the chicken rest for a few minutes.
Garnish with fresh parsley and serve immediately.
