Old Fashioned Pancakes: Just the Way Grandma Used to Make Them

In a large bowl, sift together the flour, baking powder, salt, and sugar. This helps to ensure the pancakes will be light and fluffy.
Mix Wet Ingredients:

Whisk in the melted butter, egg, and milk to the dry ingredients. Stir until the batter is just combined (be careful not to overmix). Let the batter rest for about 5 minutes to allow it to thicken slightly.
Cook the Pancakes:

Preheat a large skillet or griddle over medium-high heat and lightly spray with cooking spray.
Pour about 1/4 cup of batter into the hot skillet for each pancake.
Cook for 2-3 minutes, until bubbles appear on the edges and center of each pancake. Flip carefully and cook for an additional 1-2 minutes until golden brown.
Serve:

Serve these pancakes warm with butter and syrup, or get creative with your favorite toppings like fresh berries, whipped cream, or a dusting of powdered sugar.
