Oats, Apple, Yogurt, and Blueberries Diet Cake Recipe

In a bowl, pour the hot water over the oat flakes and stir. Let it sit for about 10-15 minutes until the oats absorb the water and soften.

Mix the wet ingredients:
In a separate bowl, whisk the eggs, erythritol (or your preferred sweetener), vanilla extract, yogurt, and melted butter until smooth.

Combine with oats:
Add the softened oat mixture to the wet ingredients and stir to combine.

Add the fruits and baking powder:
Stir in the grated apple, blueberries, and baking powder. Mix well until everything is evenly incorporated.

Bake the cake:
Preheat the oven to 350°F (175°C). Pour the batter into a greased cake pan (about 8-inch). Smooth the top with a spatula.
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
