Oatmeal, Apple, and Carrots (Sugar-Free, Flour-Free)

Place the rolled oats in a blender and pulse until the oats are roughly chopped (you don’t want them too fine). This will give the oatmeal a more cake-like texture when baked.

Combine Dry Ingredients:
In a large bowl, combine the chopped oats with baking powder and mix well.

Add Wet Ingredients:
Pour in the milk of your choice and stir until everything is fully combined. The oats should absorb the milk and begin to soften.

Add Grated Fruits and Vegetables:
Grate the carrot and apple, then add them to the oat mixture along with the chopped dried apricots and raisins. Stir to evenly distribute the ingredients.

Cook the Oatmeal:
Pour the mixture into a greased baking dish and bake at 350°F (175°C) for about 30-40 minutes, or until the top is golden brown and a toothpick comes out clean when inserted into the center.

Serve and Enjoy:
Let the dish cool slightly before serving. It’s delicious on its own or with a drizzle of your favorite milk for added creaminess.
